In pursuit of the perfect body, of well-defined shapes and healthy food, sometimes you need to escape in the junk-food world. I am always feeling delighted about what we are talking about a juicy burger with fries, forest fruits milkshake or the delicious chocolate cake.
Today I set out to share with you my favourite dishes. When I need something sweet of junk-food but I also want to maintain my body shape, I am going to the kitchen and preparing one of my favourite plates, easy to cook and the most important under 300 Kcal.
Classic burger with celeriac chips

Ingredients:
FOR BURGER
½ medium onion peeled and chopped
1 garlic clove, peeled and grated
1 medium carrot, trimmed and finely grated
400g lean minced beef
½ tsp flaked sea salt
½ tsp dried mixed herbs
FOR CELERIAC CHIPS
750g celeriac, peeled
1 tbsp olive oil
How to do it:
1. Preheat the oven to 220c
2. To make the celeriac chips, carefully cut it into roughly 1.5 cm slices and then into chips. Place in a bowl with the oil, a couple of pinches of sea salt and lots of ground of black pepper. Toss well together. Scatter over the baking tray and bake for 20 minutes. Turn the chips and return to the oven for further 5-10 minutes.
3. Meanwhile, make the burgers. Put the onion, garlic, carrot, minced, salt and dried herbs in a bowl, season with lots of ground black pepper and combine thoroughly with your hands.
4. Divide the mixture into 4 balls and flatten into burger shapes. Make then a little flatter than you think they should be, as they will shrink as they cook.
5. Place a large non-stick frying pan over medium heat and cook the burgers without any additional fat for 10 minutes, or until lightly browned and cooked through, turning occasionally. Press the burgers every now and then with a spatula so they cook evenly.
6. Divide the chips between four warmed plates and serve a burger alongside.
Thanks to that grated carrot to burgers makes them extra juicy and boosts the fibre. This is an enjoyable low-carb recipe which I use to serve with s large mixed salad and some cherry tomatoes for a little bit more colour in my plate. You can enjoy as well because the dish has only 259 Kcal per serving.
Iced berry shake

This is a very delicious recipe, especially during the summertime. What makes for me to be the favourite recipe is, of course, the ease preparing and the number of Kcal (190 per serving).
Ingredients:
25g full-fat live Greek yoghurt
75ml semi-skimmed milk
40g frozen mixed berries, (feel free to choose your favourites ones).
½ medium banana (peeled)
1 tbsp jumbo porridge oats
5g ground almonds
2 tbsp cold water
How to do it:
1. Pull all the ingredients in a blender and blitz until smooth. Add more water if necessary, to reach your preferred consistency.
2. Pour into a glass to serve. Enjoy!
Chocolate beetroot brownies

This is a great dessert when you want to eat something less Kcal, healthy and easy to cook. What I need something sweet, this recipe is very helpful, counting only 128 Kcal per serving.
Ingredients:
100g coconut oil
275g cooked beetroot drained and cut into small chunks
3 large eggs
60g cocoa powder
100g soft pitted dates
100g wholemeal self-raising flour
1 tsp ground cinnamon
1 tsp bicarbonate of soda
75g plain dark chocolate (around 85% cocoa solids), roughly chopped
Let’s do it:
1. Preheat the oven to 200°c. Grease and line the base and side of a 20 cm loose-based square cake tin with non-stick baking paper.
2. Place the beetroot, eggs, cocoa powder, dates and coconut oil in a food processor and blend until thoroughly combined. You can also blend the ingredients together in a bowl using a stick blender.
3. Add the flour, cinnamon, a pinch of sea salt and the bicarbonate of soda and blend until well combined. Add extra tablespoon water to loosen the mixture, if needed. Stir in the chocolate, then spoon into the prepared tin, spreading to the sides. Bake for about 20 minutes, or until risen and just firm to the touch.
4. Cool the tin for 10 minutes, then turn out and cut into squares to serve.
Take care of the beetroot which is in the supermarket. Some of then contain vinegar or spices. Freeze leftover brownies in a lidded container and wrapped in foil to enjoy for the rest of the week.
